Beet, Goat Cheese and Asparagus Salad

Tired of the same old salad?  Here is a quick an easy beet salad that is tall on taste.

Beet, Goat Cheese and Asparagus Salad

Yield: Serves 4

Beet, Goat Cheese and Asparagus Salad


  • Salad
  • 3 red beets, boiled
  • 1/4 c creamy goat cheese
  • 1/4 c pecans
  • 1 c asparagus, steamed or grilled
  • small bunch of fresh thyme
  • Dressing
  • 2 T honey
  • 2 t dijon or honey mustard
  • 4 T red wine vinegar
  • 1/4 olive oil
  • 1 T minced shallot
  • salt and pepper to taste


  1. Slice red beets and layer on a serving platter. Drop spoonfuls of goat cheese on top.
  2. Spread pecans and layer asparagus on top of beets.
  3. Cut small pieces of thyme and sprinkle onto salad.
  4. Mix together dressing in ingredients with a wire whisk and drizzle over salad.
