The Remedy for the Never Ending Rain

We have been experiencing a rainy spring in Munich this year.  Our city is not known for its endless summer days and for the years I have lived here spring and summer have been consistently inconsistent weather-wise.  From snowy Easters and hailstorms in May to chilly Augusts and the occasional heat waves that cause sleepless nights, I’ve come to just enjoy the good weather on the days when it happens and forget forecasts and expectations.

I am not a fan of very hot weather and with homes and offices foregoing air conditioning, I would rather cool and wet than hot and sunny but it would still be nice to have more sunny days than we have seen this spring so far.  I can’t control the weather but when I saw this recipe from Cooking light for Tuscan Lemon muffins featuring lemons, olive oil and ricotta cheese it brought me back to sunnier days spent vacationing in Tuscany and I knew I would be making these for breakfast one morning this weekend.

They came out light, fluffy, sun-kissed and lemony.  Let the sun shine!!

Tuscan Lemon Muffins


  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup part-skim ricotta cheese
  • 1/2 cup water
  • 1/4 cup olive oil
  • 1 tablespoon grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 1 large egg, lightly beaten
  • Cooking spray
  • 2 tablespoons turbinado sugar
